The idea was to create a unique environment where the public might experience, test, and purchase the many designs and work-in-progress prototypes emerging from ArtScience Labs cultural experiments. Integral to The Lab is the FoodLab, where experimental foods are tried as benefits of daily, weekly, and monthly memberships. The Lab Store, launched with young entrepreneur Alexandre Terrien, was designed by Mathieu Lehanneur, and the FoodLab with help from the culinary designer Marc Bretillot and the culinary photographer Mathilde de l'Ecotais. David founded the FoodLab with Paris Mandarin Oriental Chef Thierry Marx.
